Who doesn’t love a good avocado toast? It is a healthy brunch or breakfast, lunch, and dinner…….There are so many different ways to make it, and I will show you my favourite! Balsamic pearls are a beautiful addition to many dishes. I was gifted these beauties from my friend and Kundalini yoga instructor, Kailee. Thanks, Kailee! If you don’t have balsamic pearls, a drizzle of balsamic glaze is a perfect substitute. You can get the pearls at your local Italian Centre or specialty shops. I also made a lovely Burrata Caprese Salad with the pearls. This dish is great for entertaining and a fabulous twist on a Caprese.

Now back to avocado toast: a few tips and tricks to help you make the perfect plate:
- Avocado: you want the avocado to be lightly soft to the touch, but still a bit firm so they aren’t brown or mushy
- Bread: choose a solid type of bread: my one and only is sourdough
- Garnishes: cut the sun dried tomatoes into small pieces, and the pearls on top of the egg so you can see how pretty they are
- I LOVE blistered tomatoes: Just place them on a cookie sheet and broil for 5 minutes or so. Alternatively, a blow torch is always fun.
How to Poach an egg
- Bring a medium pot of water to a boil with a tablespoon of vinegar. This helps the egg white set and hold the shape.
- Stir the water with a slotted spoon to create a funnel
- Crack 1-2 eggs into the pot and gently stir the water again (around the egg, not on the egg)
- For a perfect soft poach, I recommend cooking for 2.5 minutes
- Remove with a slotted spoon and place on the avocado
Another super easy way to poach an egg is to purchase an egg poacher. They are easy to use. Just add some water to the bottom of the pan and you have perfectly cooked poached eggs.
Alternatives for Avocado Toast (although it is SO good the way it is)
- Add crumbled feta cheese
- Switch from pearls to balsamic glaze
- Swap out sun dried tomatoes for crispy prosciutto
- Add some smoked salmon under the avocado
- Make it GLUTEN-FREE: you can use avocado as the base and it is still a beautiful plate
